Howdy!
We’re taking a look at some of Texas Trail Boss Original Beef Jerky purchased at their airport terminal store at George Bush Internal Airport in Houston, Texas.
We caught the store’s cattle-themed sign poking out from around a corner at IAH and were immediately intrigued. Having never heard of Texas Trail Boss Jerky before the notion of an airport store focused solely on jerky was quite a draw. The store is small but focused. While they sell bottled water and a small assortment of bagged nuts their primary wares are all about the meat. Texas Trail Boss Jerky sells an assortment of beef and turkey jerky in various flavors by weight. They are happy to offer up tastes to temp you into buying more, which we happily indulged in. The jerky is displayed in a butcher’s display case in neatly labeled bins – original, turkey, teriyaki, etc. – and the woman behind the counter explained that their inventory varies day-to-day. So, having been tempted by the taste-tease we picked up a few samples and continued on our journey. Is this jerky worth a return trip? Let’s see what you get with this one:
Taste (B+): You start with a really pleasant mesquite smoked flavor, enhanced by a subtle sweetness, that combines to really bring out the savory goodness of the beef. The overall result is a notably tasty flavor that’s well-balanced and very enjoyable.
Texture (A-): This jerky is natural-style and cut against the grain. It tears readily, is comparatively easy to chew, and feels great to eat. The meat is dry and only slightly tender but gives way easily once you start eating it.
Smell (B): The sweet and mesquite smoke smell isn’t particularly pronounced, but it’s still enjoyable. The jerky is sufficiently dry that the scent doesn’t travel far, but when you get up close it’s goodness.
Appearance (B+): This jerky looks really nice. It’s a natural-style jerky, cut across the grain, with a dark brown color sporting the occasional red highlight. The pieces range in size from your typical multi-bite chunk to the tiniest bits of jerky dust. This was a bit fun, but also a bit messy. A little more attention to delivering actual bite-sized or bigger pieces would enhance this jerky.
Consistency (A-): The flavor and texture of this original flavored jerky is very well done and uniform throughout. Even the bits of jerky dust, when gathered into a morsel or two, delivered a full measure of sweet and smoky goodness. The pieces, while irregularly shaped and cut, had a consistent thickness and moisture and showed attention to quality.
Overall Impression (B+): This is a really tasty treat, particularly for an airport treat, and if you find yourself in IAH terminal A, swing on by and see what the Texas Trail Boss Jerky folks have in stock for the day. With a delicious taste and good quality you’re bound to enjoy the meaty goodness. If you’re on the fence about picking up a few ounces for the flight ahead just give in to a sample bite or two and the choice will be clear enough for you. Eat well!

We’re sampling a bit of Woody’s Smokehouse Pork Jerky, purchased at the fantastically delicious Woody’s Smokehouse in Centerville, Texas.
Another of the meaty treats picked up on a recent visit to this venerable institution, this pork jerky is sold by the piece or by the bag… so we did both. We purchased a half-pound of jerky from the meat counter and picked up a vacuum sealed individual piece just for grins. Is this the jerky you’ve been yearning for? Let’s find out what you get in this one:
Taste (A-): Wow, this is some tasty stuff. This is a peppery jerky, spicy in just the right measure, that perfectly complements and enhances the taste of the excellently tasty pork. It’s simply delicious and, for those who prefer to really taste the meat, really delivers.
Texture (A+): Cut along the grain, this natural-style jerky is easy to tear into bites and chews easily. It’s a tender but only slightly moist jerky that feels just right. The thickness of the pieces is spot on as well as being just thick enough to give you some substance in each bite but still thin enough to allow for easy consumption. Simply fantastic.
Smell (B+): The dried pork smell is pretty nice here. It has a mellow, meaty smell with little else to get in the way. You can just faintly detect a bit of the pepper, but overall it foreshadows the taste to come nicely.
Appearance (A): You’ll notice right off that this jerky is made of choice meat. Sporting a reddish-brown color and a natural-cut look, the pieces range in size from bites to several inches long. Coarse ground pepper is loosely spread across the surface and it all combines to provide a squarely appetizing overall look.
Consistency (A+): Again, Woody’s Smokehouse knows their stuff – this an expertly crafted jerky. The pieces are of a uniform thickness and flavor through and through. The coarse pepper never seems to be more intense in one bite over another and the moisture of each piece is meticulously uniform. This jerky shows true skill and the benefit of many, many years of craftsmanship.
Overall (A-): This is some seriously good stuff. There’s nothing elaborate here, you’re getting straight forward pork jerky done right and that is absolutely all you need. Bite for bite this stuff is just outright great and if you’re a fan of pork jerky we’d wager that you’ll eat this stuff up in a hurry. It’s okay.. succumb to temptation… make your way to either of Woody’s Smokehouse locations or order up some of this delicious meat from their website. Your mouth will delight in the meaty joy of it all. Enjoy!

Today we’re gnawing our way through a bag of Woody’s Smokehouse Teriyaki Beef Jerky from the folks at Woody’s Smokehouse in Centerville, Texas.
Woody’s Smokehouse, located mid-way between Dallas and Houston along I-45, sells a wide variety of tasty meats ranging from a veritable cornucopia of jerky and sausages to smoked cheeses and a bevy of country store snacks and treats. You could easily spend an afternoon eating your way through the place. Of course, their jerky is front and center as you step into one of their two sister stores (one each on the West and East side of the Interstate) with a good ol’ fashioned butcher’s case full of dried meats and other tasty treats. With such a prominent place in their wares how great is their jerky? Let’s find out what you get in this one:
Taste (B): This is a deliciously smoky and savory jerky. The seasoning brings out the best in the beef while also delivering a great flavor of its own. The jerky is slightly sweet and superbly complemented by the onion and garlic. This is a fantastically delicious jerky… but totally misses the mark for teriyaki. There are none of the strong sweet or tangy soy flavors that are at the core of a teriyaki seasoning. No fruity flavors either. Having enjoyed Woody’s jerky before, there’s a real possibility that somebody mis-marked the bag. Still, taking it for was it says it is, it’s a fantastically delicious jerky that doesn’t meet muster for teriyaki… and yet it’s still tasty enough to get a B. MMmm.
Texture (A+): This jerky is slightly tender and is original cut along the grain. The jerky tears easily and is a joy to chew. You get just the right balance between being a substantial piece of meat and being melt-in-your-mouth eatable. This jerky makes the mouth happy.
Smell (B-): The smell of this jerky is outstanding. There’s a fantastic smoky aroma that, along with the beef itself, will get your mouth-watering all on its own. If only it smelled remotely teriyaki like it’d be all the better. So, while the smell would be a home run for another flavor of jerky, for this one it again fails to meet the mark.
Appearance (A): With a dark brown color sporting a slightly reddish hue, this jerky’s with-the-grain cut pieces look natural and delicious. The pieces are cut into various ranging from a tasty morsel to a multi-bite chunk. They looks outstanding and clearly show the quality of both the beef and the craftsmanship all at once.
Consistency (A+): The folks at Woody’s Smokehouse can really make some jerky. This is, bite for bite, a delicious and well-made treat. The pieces are of a consistent, but not uniform, thickness giving an enjoyable variety as you make your way through the bag. The taste and moisture, even with this deliberate variation, is absolutely the same. You can see this pure expertise that the fine folks at Woody’s have brought to bare on this jerky in every bite. It is simply exceptional.
Overall (B+): If only this otherwise outstanding jerky actually tasted like a teriyaki seasoned jerky it would have easily had top marks clear across, but the fact that this jerky didn’t have any real traces of the labeled flavor really takes a lot out of the experience. Still, the jerky is exceptionally made and fantastically enjoyable. If you have the opportunity to take a trek down to Woody’s Smokehouse you will doubtless agree that they provide some of the finest jerky around. We’ll probably try to pick up another bag of their teriyaki on our next visit to see if maybe this bag was just mis-labeled. A re-review would be all sorts of fun. Enjoy!

Today we’re dipping our toe back into the international jerky scene with a package of Seven Premium Dried Sausages from a Seven & i 7-eleven store in Tokyo, Japan.
This time around we must admit to a bit of apprehension in choosing to purchase this meaty treat. While the packaging is neat and the picture of the meat sticks looks inviting enough there was no way to actually read the bag to know what was in this stuff. So… yeah. Mystery meat. Still, jerkyology often requires faith and a sense of adventure so we plopped down some Yen, bought some meat, and here we are… wondering. Is this a tasty treat about to be enjoyed or a well-meaning but colossal lapse of consumer judgement? Let’s see what you get with this one:
Taste (B+): This is a deliciously savory sausage with a mild flavor with strong hints of garlic and a slight touch of pepper. It tastes like a pork-based sausage, maybe with a bit of chicken mixed in. Not at all spicy, it is instead almost sweet, and you quickly find yourself reaching for the next bite. This tastes like a very simple recipe and does not seem to have a lot of the preservatives you’d typically find in shelf-stable meats.
Texture (B+): These sticks are tender, but dry and not at all greasy. Their casing is thin and unobtrusive and barely registers as you eat a stick. The meat inside is thoroughly ground and chews nicely with each bite. This is a nicely made stick that feels good in your mouth.
Smell (B): There’s a slightly smoky sweet scent to these sticks, with a bit of that garlic and pepper coming through. The smell is not very pronounced but compliments this treat very nicely.
Appearance (A): First, each stick in this package is individually wrapped. Seriously. To my American eyes they look almost like little candy treats, each end of the clear plastic sheet twisted to keep the wrapper closed. Remarkable. This extra bit of TLC seems to have done a remarkable job in keeping each piece of sausage looking its best. The pieces are a light brown color, with spots of even lighter color visible throughout, and the ends of each piece are uniformly cut. There’s an air of precision, for lack of a better word, conveyed by this meaty treat. The wrappers are printed with “Jackie Calpas” which, with a bit of online searching, appears to be the manufacturer providing these sausages for 7-eleven in Japan. More than a novelty, this just looks fantastic inside the wrapper and out.
Consistency (A): The sausages themselves are made of a fantastically well-blended meat that is uniformly moist and tasty throughout the entire bag. The moisture of these sticks is exceptionally well maintained and their flavor, too, is simply expertly applied. These sausages are the product of serious attention to detail and it shows in every bite.
Overall Impression (B+): What a treat! While we’re still not quite sure what it is we actually just ate we are 100% sure it was delicious. Given that these are a convenience store brand, these Dried Sausages are a diamond in the rough and that they’re individually wrapped is just a hoot! If you’re in Japan and your meat tooth starts itching you can definitely get some satisfaction with this fantastic snack. Eat well!

Today we’re sampling a bag of Teriyaki Beef Jerky strips from Texas Meat Packers, a purveyor of fine meats just down the road in Richardson, Texas.
This is a Go Texan jerky, made right here in the Lone Star State. We picked this one up at The Great State Fair of Texas and expect it to be a great example of meaty goodness. Does this jerky provide a treat worthy of our chew? Let’s see what you get with this one:
Taste (B+): This is an enjoyably sweet jerky, with the brown sugar and regular sugar flavors nicely set against a bit of garlic and onion. There’s a slightly smokey quality to it, too, that helps to round out the taste in a nice way. None of the flavors are particularly strong, but the overall flavor is solidly tasty. The only detractor here is that for a Teriyaki jerky there’s no discernible fruity taste to speak of. Still, it’s a really pleasantly sweet jerky.
Texture (A-): This jerky is slightly tender, sliced very thin, and easy to bite and chew. It’s on the dry side so it’ll give your jaw a bit of a workout, but it’s definitely a great feeling jerky to eat.
Smell (B-): This jerky smells nice. You get a whiff of the brown sugar and smokiness first with a bit of the savory scents afterward. The scent does a good job setting up the taste and, overall, works well.
Appearance (B+): This natural style jerky looks good. It deep dark brown color with a combination of cut and natural edges. The pieces range in side from a couple bites to jerky dust, with the tiny bits looking to be more the result of normal handling than anything else. It’s an appetizing treat to behold.
Consistency (A): This jerky is cut thin and the flavor is exactingly tasty through and through. The Texas Meat Packers folks clearly know their craft and skillfully made a quality product.
Overall Impression (B+): This is a really nice jerky. Sliced thin and sweet like you like it, you’ll definitely do well with a bag of this great jerky. We’re going to keep an eye out for more from our friends in Richardson in the hope they have other tasty treats waiting. Pick up some of this great jerky if you can and enjoy!
